(AP) ? Two people who pulled up at a McDonald's drive-thru in western Illinois completely naked face public indecency charges.

Police in Galesburg say a 19-year-old El Paso man and a 21-year-old Galesburg woman have been released from Knox County Jail after being ordered to appear in court to face the charges.

WGIL Radio reports that the duo was still in the McDonald's parking lot when officers arrived just before 2 a.m. Wednesday. Police say the man was crouched over in the driver's seat trying to pull on a pair of pants while his passenger was covering up in a blanket.

WGIL reports that the pair told officers the late night fast-food run might not have been a great idea but that they both still thought it was funny.

Romney plans aggressive push before Iowa caucuses (AP)

CEDAR FALLS, Iowa ? Feeling optimistic, Republican presidential candidate Mitt Romney on Thursday was positive on TV with an upbeat, new ad but in person went negative against President Barack Obama. He also announced an aggressive schedule of campaign events for the days leading up to next week's caucuses.

Romney, who is wrapping up a bus tour of eastern Iowa on Friday, planned to campaign in New Hampshire early Saturday before returning to Iowa that evening for a series of events on the economy. Those events are to be followed by six campaign rallies, mostly in eastern Iowa, from Sunday through Tuesday's caucuses, including an early morning one before voters start gathering to declare their candidate preferences.

Romney will then spend caucus night in Des Moines before flying to New Hampshire on Wednesday morning.

The newly planned events show a confident Romney campaign in the final five days of the campaign for Iowa. While Romney had spent months working to lower expectations that he would win here, the latest polls show him in strong position to win outright or finish in second place behind Texas Rep. Ron Paul.

Romney's six rallies begin New Year's Day in Council Bluffs, in the western part of the state. In 2008, he did well in nearby counties where agribusiness drives the economy. He'll hold another set of rallies in eastern Iowa, where he also performed well.

The plans come as Romney began running a new, minute-long TV ad in Iowa. The spot shows clips from Romney's announcement speech in June. Romney also talks in the ad about the "spirit of enterprise" and focuses on the opportunities America has provided its people.

Romney repeated the pitch from the ad during an early-morning stop at a diner. He ignored his Republican rivals, who are also campaigning furiously in the state, and focused instead on the Democratic president.

"We have a choice in this coming election of what kind of America we're going to have," Romney told the crowd at J's Homestyle Cooking. "It's not just about replacing a president. It's about saving the soul of America. Are we going to change America into something we don't recognize?"

The former Massachusetts governor had two other events scheduled Thursday, including at Music Man Square in Mason City, the birthplace of playwright Meredith Willson. Willson set his play, "The Music Man," in a fictional Iowa town that he based on Mason City.

Our Favorite Celebrity Couples Of 2011

From Britney and Jason to K-Stew and R-Pattz, we look back at the best high-profile pair-ups of the year.
By Jocelyn Vena

From young love to established romantic empires, 2011 was all about PDA. Some of La La Land's most A-list couples weren't shy about flaunting the love they share. From musicians to actors to everyone in between, the last 12 months were all about sharing the love. As the year winds down, MTV News is reflecting on some of our favorite couples of the year.

Britney Spears and Jason Trawick
The couple walked red carpets, gave each other shout-outs at awards shows and even got naked together in Britney's "Criminal" video, but it wasn't until December that they decided to make it official. After two years of dating, Spears and Trawick took their relationship to the next level, with confirmation that Jason put a ring on it. The pair celebrated their love and their impending nuptials in Las Vegas. Their engagement sparked headlines and left Spears "glowing."

Who is your top couple of 2011? Vote in our Newsroom poll!

Justin Bieber and Selena Gomez
Summing up Justin Bieber and Selena Gomez's year into a little blurb isn't that easy. They went to events together, and Bieber lavishly rented the Staples Center just to watch "Titanic." And when they weren't chilling out, they were giving shine to each other's hard work. Or bringing each other gifts. Remember when Bieber showed Selena his pet snake, Johnson, at the VMAs? Yes, we knew you wouldn't forget.

Kristen Stewart and Robert Pattinson
The two "Twilight" stars seem poised to make our favorite couples lists for years to come. While in years past, they've remained under the radar, this year they came out of their shell and opened up about one another in interviews. Who could forget the time that K-Stew referred to her not-so-mysterious "English" boyfriend in an interview? We're assuming not R-Pattz.

Beyoncé and Jay-Z
OK, so Beyoncé and Jay-Z have been together for, like, an eternity, but it wasn't until this year that the pair really had everyone buzzing. When Beyoncé stepped out at the VMAs, her expanding midsection and flashy performance was the ultimate pregnancy announcement. Jay-Z didn't seem to mind all the attention. He celebrated the baby news in the audience with his pal Kanye West.

Wiz Khalifa and Amber Rose
Amber Rose rebounded from her relationship with Kanye West by falling in love with Wiz Khalifa. The couple took the world on their wild relationship ride, from doing interviews together to sparking rumors that they had tied the knot. These two kept everyone talking and they don't seem to mind the attention, or spending lots of time with one another.

Did we forget your favorite couple of 2011? Let us know on Facebook!

China unveils high-speed train, design inspired by ancient Chinese sword

Yahoo! News reports that China has unveiled a high-speed six-car train on Tuesday. The prototype train, which is manufactured by state-owned CSR Corp., is capable of traveling at speeds of up to 310 miles per hour.

Built from plastic reinforced with carbon fibre and magnesium alloy, the train was designed to be lightweight and inspired by an ancient Chinese sword for its looks.

The unveiling pushed through despite the high-speed rail accident that happened last July that claimed the lives of 40 people.

No. 2 Ohio State beats Northwestern 87-54 (AP)

COLUMBUS, Ohio ? Northwestern coach Bill Carmody was in mid-thought when he suddenly said of Ohio State's William Buford, "I don't know if you'd call it his team but ... he's a senior, right?"

Told that Buford was, indeed, the second-ranked Buckeyes' only senior, Carmody muttered, "Thank God."

Buford had career-highs of 28 points and five 3-pointers as Ohio State showed off its perimeter shooting in an 87-54 victory over Northwestern on Wednesday night in the Big Ten opener for both teams.

"I was just shooting the ball," said Buford, who was 9 of 14 from the field including 5 of 7 on 3-pointers. "I was fortunate to knock them down because my teammates were setting great screens for me. They kept telling me to shoot."

Next-to-last in the conference in 3-pointers at 4.8 per game, the Buckeyes hit seven in the first half to build a big lead and finished 10 for 20 from long range.

"We were saving it," Ohio State coach Thad Matta cracked.

It wasn't just a bunch of guys firing up shots from a distance, either. Jared Sullinger added 17 points and 14 rebounds for the Buckeyes (13-1, 1-0), who dominated the boards 49-30.

Deshaun Thomas had 16 points for Ohio State, which broke the game open with a 13-0 first-half run fueled by 3-pointers. Jordan Sibert added 12 points, all on 3s.

"Thad said at the end when we shook hands, `This was about as good as we can play,'" Carmody said, adding "And we had a lot to do with that."

The conference's top two scorers, John Shurna and Drew Crawford, had miserable games. They were held to 11 and 13 points, respectively, on a combined 9-for-30 shooting.

The loss was the 31st straight for the Wildcats (10-3) in Columbus, dating to 1977.

Even when Northwestern pared what was a 19-point lead down to 12 in the second half, the Buckeyes pulled away again and Buford led the way.

He hit four free throws in a 10-3 run ? all the points coming at the line ? to push the lead to 59-39 with 11:55 left. By then, a refreshed Sullinger and point guard Aaron Craft, who sat out for several minutes due to foul trouble, were back on the court and the game was well in hand for Ohio State.

With Shurna and Crawford struggling ? shadowed wherever they went, taking bad shots when they did get a chance ? the Buckeyes took a 41-26 halftime lead.

The pace favored the Wildcats in the early going. They pulled to a tie at 13 on Davide Curletti's 3 at the 12:16 mark.

But the Buckeyes suddenly found the range behind the arc and the game teetered in their favor.

Sibert, just 8 for 31 on 3-pointers coming in, hit 3 of 4, as did Buford. Sibert's 3 ignited a 13-0 rally as the Buckeyes held the Wildcats scoreless for 4:36.

Craft had smacked Sibert's shooting hand in practice recently. Sibert said he had torn ligaments in it, but Sullinger joked that it was just "a little bruise."

The injury certainly didn't seem to bother him.

His four 3s and 12 points were career-highs.

"I had kind of gotten complacent in the spring and summer shooting and I didn't work as hard as I felt I needed to," he said. So he shot 400 or 500 extra shots per night with managers chasing down rebounds.

Matta joked that Sibert's shooting is so much better with the injured hand that even if it required surgery, Sibert would have to play through the pain.

"We're not going to fix it," Matta said, laughing. "We're going to leave it be."

Thomas continued the spurt by hitting a short jumper before Buford nailed a 3 and then made the play of the game. Shurna muscled past the smaller Craft and broke free for a short jumper but Buford went high to block it.

That seemed to set the tone for the rest of the surge. Sibert hit another 3 and Buford followed with a perimeter jumper that was first signaled a 3 but then discounted to a two-point basket after a video review.

The lead never dropped below 11 points again as Ohio State won its 34th straight home game and stayed perfect at home against Northwestern since 1977.

Buford, who came in averaging 8 points and 4 rebounds in five previous games against Northwestern, had 13 points and 7 rebounds at halftime.

Sullinger said Buford has grown into being a leader after remaining quiet for much of his first couple of years on campus.

"Will's doing a great job," he said. "He's more vocal. He's taking on a lot more of the leadership on himself this year."

Sibert said that with an Ohio State team that only has one senior and one junior (backup post Evan Ravenel), Buford has had a profound effect on the younger players.

"We look to Will," he said. "He finds a way to make sure our team stays in rhythm."

Rising Green Movement Launches Counter-Attack Against Shale Oil Boom

  • Green groups seen slowing development
  • Success in fighting pipeline energizes efforts
  • Shale oil and gas industry on defensive

By Ayesha Rascoe

WASHINGTON, Dec 27 (Reuters) - A resurgent green movement is launching a multi-pronged counter-attack against the shale oil and gas boom in the United States that could slow, though ultimately not stop, development.

Building upon their unexpected success in the battle against the Keystone XL pipeline, a renewed onslaught from environmentalists is putting the shale industry on the defensive while adding to costs, limiting expansion and potentially scuttling major projects.

"I think it's the totality of what's going on all at once, that's the biggest concern," said Barclay Nicholson, a lawyer for the Washington-based Fulbright & Jaworski law firm, which has represented companies involved in shale development.

With new oversight pending from federal and state authorities and lawsuits, Nicholson said critics of shale development have a plethora of avenues to fight back.

Environmentalists, alarmed at what they see as unchecked industrialization of rural areas, say they are working to secure more regulation of the rapidly growing shale industry to protect fragile areas from damaging practices.

PIECE MEAL APPROACH

After legislation aimed at addressing climate change failed to make it into law last year, green groups have been forced to take a more piece meal approach to energy policy.

That strategy worked well against TransCanada's proposed Canada-to-Texas Keystone XL pipeline, which environmentalists successfully turned into a potent symbol of the threat of carbon-intensive oil sands crude.

In November the Obama administration delayed the project, once described as a "no brainer" by Canada's Prime Minister Stephen Harper, after a wave of protests erupted in Washington and on the campaign trail.

The decision was like a shot of adrenalin for the green movement and groups are planning more creative and high profile efforts to fight a range of energy projects.

Republicans in Congress maneuvered to keep Keystone alive by including a provision in tax legislation that would force the White House to make decision on the project within 60 days.

But green groups have vowed to fight on and the administration has already said it cannot approve the project because of the time needed to study new routes.

"For the moment we're stuck fighting one pipeline, one gas well at a time," said Bill McKibben, who rose to prominence with his staging of huge protests against Keystone and is now using his influence to attack the fracking bonanza.

FRACKING IN THE SPOTLIGHT

Oil and gas companies are using advanced drilling techniques to unlock vast stores of shale fuel across the country, which is bringing legions of rigs, trucks and workers to areas unused to such activity.

The companies employ the controversial "fracking" drilling process, that involves fracturing rock formations by shooting vast and often secret cocktails of water and chemicals deep underground to free a trove of hydrocarbons.

The oil and gas industry argues that the fracking technique has been used safely for years and advances in the practice have set off a revolution that is creating jobs and boosting U.S. energy security.

But, environmentalists warn against downplaying their concerns about fracking.

"I'm not sure that they really want a Keystone XL fight on their hands, because the public is strong and they're not going to back down on this issue," said Deb Nardone, director of the Sierra Club's natural gas reform campaign, which formally launched this year.

Worries about shale output have already prompted the Environmental Protection Agency and the Interior Department to begin crafting new regulations that address issues such as wastewater disposal and disclosure of chemicals.

Green Groups have made headway with their appeals in New York, where authorities have imposed a temporary moratorium on shale drilling. Environmentalists also cheered a decision by regulators to delay a vote on lifting a ban on shale drilling in the Delaware River basin that affects the states of New York, Pennsylvania, Delaware and New Jersey.

John Sachs, a director at energy investment bank Taylor-DeJongh, said the economic and domestic energy benefits of access to cleaner burning natural gas will ultimately win out, but green groups may be able to make inroads in some areas.

"It may slow down some of the development in some states," Sachs said. He said such delays would not necessarily be negative for development, because it would allow industry and regulators to address some of the public concerns.

CHANGING THE MAP

American Gas Association president Dave McCurdy recently told reporters that while there were some legitimate concerns about development, the problems were manageable.

"None of those are going to halt the production of shale gas in this country," McCurdy told reporters earlier this month. "It is changing the political and economic map."

Still, the expansion of shale production has spawned dozens of local groups and activists focused on combating development.

Scott Ely, a resident of the small town of Dimock, Pennsylvania, very much at the epicenter of the fight over shale production, said he is trying to spread his story.

Green groups have rallied in support of Ely and 10 other families in Dimock that say their water was contaminated after Cabot Oil and Gas began drilling in their area. Cabot has denied responsibility.

"As far as the oil industry goes, this is a machine you're probably not going to be able to stop because the world needs its gas," Ely said in Dimock in December where supporters in a publicity event delivered fresh water to the families. "But because of what we did three years ago, when we started coming out, they've already started making changes in the way they operate."

How Best Buy Stole Christmas

best-buy-grinch"I wouldn't touch you with a thirty-nine-and-a-half foot pole." There's a bit of inherent risk when shopping online. You're handing over your credit card to a retailer that promises to ship you something in return. Most of the time transactions are completed without issue and orders are fulfilled as promised. Sometimes things go awry, though. And sometimes Best Buy ruins Christmas. Best Buy started reaching out to customers earlier this week -- you know, mere days before Christmas -- that the retailer was unable to fulfill orders placed as far back as November. Big Blue was sorry but they were canceling the affected orders. Happy holidays! Signed, your merry friends at Best Buy!

Internet Changes How We Remember

Head Lines | Mind & Brain Cover Image: January 2012 Scientific American MagazineSee Inside

Knowing we can retrieve facts online later alters memory

Image: Mike Kemp/Corbis

Four years ago Columbia University psychologist Betsy Sparrow turned to her husband after looking up some movie trivia online and asked, ?What did we do before the Internet?? Thus, Sparrow set out to investigate how Google, and all the information it proffers, has changed how people think. Four psychology experiments later Sparrow has her answer, which was published in Science this past August. ?[The Web] is an external memory storage space, and we make it responsible for remembering things,? she says.

In one of Sparrow?s experiments she presented two groups of undergraduates with trivia statements. Individuals in one group, who were told they could retrieve the information later on their computer, had worse recall than subjects in the other group, who knew in advance they could not do so. Together with the rest of her results, this finding suggests that Internet users have learned to remember how to find a fact rather than the fact itself.

Does this mean the Web is dumbing us down? Certainly not, she says: ?Memory is much greater than memorizing.? Our brain may simply be adapting to present circum?stances, Sparrow points out. ?We?re in an Internet world.?

Flooding May Have Contributed to Exxon Mobile Oil Spill in Yellowstone River (ContributorNetwork)

A rupture in an Exxon Mobile pipeline that runs under the Yellowstone River in Montana ruptured and dumped tens of thousands of barrels of oil. The spill has forced water intakes downstream to close.

According to a report by NBC news at www.nbcnews.com the pipe broke about 11:30 p.m. Friday, and leaked for a half-hour.

The cause of the rupture isn't known yet, but some experts believe that debris from the recent flooding may have caused the spill. Brent Peters, the fire chief for the city of Laurel stated that 'the break in the 12-inch diameter pipe occurred about a mile south of Laurel. Crews shut down the pipeline about half an hour later.'

Hundreds were evacuated around12:15 a.m. Saturday because emergency crews feared a possible explosion and dangerous fumes.

Gov. Brian Schweitzer and Sen. Max Baucus called for immediate cleanup. Exxon Mobile said it is sending a North American Regional Response team to help with the cleanup.

In a press release Exxon Mobile "The company deeply regrets this release and is working hard with local emergency authorities to mitigate the impacts of this release on the surrounding communities and to the environment."

Oil washed ashore from Laurel to Pompeys Pillar, a distance of nearly 50 miles by Saturday afternoon. The spill continues to move east. Yellowstone River has no dams on its confluence with the Missouri River so at this time it is unclear how far the spill may travel.

Cleanup crews have set out an absorbent material along short stretches of the river in Billings.

Exxon has set up a toll free number for people to call with questions and concerns. 1-888-382-0043

InFocus IN114

The InFocus IN114 ($399 direct) is a capable data projector that can be had at a very low price. There are plenty of projectors out there with higher resolution, better image quality, and/or more features, but the IN114 costs less than most, is highly portable, and is fine for basic business presentations

The IN114 uses a DLP light engine rated at 2,700 lumens. It has a native XGA (1,024 by 768) resolution, a 4:3 aspect ratio befitting data presentations. The projector, black with rounded corners, measures 2.8 by 11.8 by 9.2 inches and weighs 4.8 pounds, making it very easy to tote around. It has a focus wheel and a zoom wheel, each accessible from above the lens. In back there are two VGA-in ports for connecting to multiple computers; VGA-out for connecting to a monitor; RS232; S-Video; a yellow RCA composite video jack; audio-in and audio-out jacks; and a USB mini-B port that you can plug into your computer. It lacks a USB type A port that would let you run a computer-free presentation off a USB thumb drive.

Data and Video Testing

The IN114?s projecting distance was somewhat longer than with most projectors I?ve looked at; I needed about nine feet to fill our test screen with a 60-inch diagonal image on our test screen at the highest zoom setting.

In testing with the DisplayMate suite, the InFocus IN114?s data image quality was fair. Light gray tones often showed greenish tints, while white areas sometimes looked slightly yellowish. Gray areas with a hatched or moir? pattern looked distinctly greenish. Although type was readable down to the smallest size, the smallest type was a bit blurred.

All DLP projectors are potentially subject to the rainbow effect, in which bright areas break up into their component colors when one shifts one?s gaze, or when bright objects move in the case of video. The IN114 showed an average rainbow effect for a DLP projector; it could be distracting to people who are particularly sensitive to it.

Video quality is fine for short to medium-length video clips shown as part of a presentation, though you probably wouldn?t want to watch movies with it. In our test clips, the projector did better in retaining detail in darker than in very bright scenes. There were traces of posterization, sudden shifts in color or tone where they should be gradual. The rainbow effect was visible in scenes that typically bring it out. It may or may not be an issue, depending on how sensitive your audience is.

Other Issues

The IN114 has a built-in 2-watt speaker, and its audio is of decent quality and volume.?This projector?s lamp life is very good: 6,000 hours in eco mode, 4,500 hours in normal mode. Another plus is the 5-year limited warranty (though the lamp is only under warranty for 6 months).

Although its data and video quality are average, the InFocus IN114 does well as a budget data projector, adding features like long lamp life and a 5-year limited warrantee. ?It?s compact, portable, and easy to use?and you can?t beat the price. If you need better image quality and a fuller feature set, check out the NEC NP64 ($1,099, 4 stars) or the Editors? Choice WXGA-resolution NEC NP-260W ($850 street, 4 stars), though at their price you could get two IN114s with money to spare.

HP releases X4000 and X5000 mice that don't mind which hand you use (video)

Christmas at the House of Meg means there's two new wireless mice coming to fill the stockings of those who don't eat chocolate. Both units are clad in shimmering plastic and (not-so-shimmering) soft touch rubber, accommodating righties and lefties with equal ease. The 2.4GHz devices will give you 30-foot of roaming distance and a purported battery life of 30 months (on the X4000). The higher-end X5000 [pictured] has a touch scroll strip and four customizable buttons -- including a one-click Facebook button to match the social butterfly X7000. We've got a teaser video below that's either hyping these mice or the next James Bond movie (we're not sure) and you can snap 'em up from our source links, costing $29.99 (X4000) and $39.99 (X5000) respectively.

Motorola Xyboard 8.2 review

The march of the Honeycomb tablets goes on, playing a tune that's starting to get a bit muted thanks to the promise of fresher beats coming from Ice Cream Sandwich. Still, there are plenty of ways for manufacturers to add their own bit of swing to the same 'ol song. Motorola, of course, paved the way for all these slates with the Xoom. It's hard to believe that first Honeycomb tablet was released just 10 months ago, but now we have its successor, the Xyboard, here in its 8.2-inch guise.

At least, that's what it's being called domestically. Elsewhere it's the Xoom 2 (we reviewed the 10.1-inch flavor already), but in America we get a patently unfortunate moniker for a tablet that offers an interesting design at an interesting size with the interesting bonus of LTE. But, all that mobile bandwidth is going to cost you: $430 for the 16GB model or $530 for 32GB if you sign on for a two-year data contract. Does the funky design, convenient size and high-rate connectivity make up for the added cost over something like the class-leading Transformer Prime? Let's find out.

Time stones at the ready -- Sonic CD now available for Android

Sonic CD on Android

SEGA has just released Sonic the Hedgehog CD on Android, as well as a few other platforms. The Android version is available for $1.99 on the US Market, or £1.29 in the UK. Sonic CD, which first appeared on the Mega CD (SEGA CD) back in 1993, is fondly remembered for its fast platform gameplay and over-the-top, J-Pop-inspired soundtrack.

A few words of warning, though -- some users are reporting slow playback on certain devices, including the Droid Bionic and the shiny new Samsung Galaxy Nexus. So you may want to hold off if you're planning on playing it on one of those devices.

The game worked flawlessly on the handful of Gingerbread devices we tried, however. SEGA has enabled widescreen support too, so you won't have to deal with any black bars. There's also the option to forego the English soundtrack in favor of the crazier Japanese original. Trust us, that's a good thing.

Why? The answer, along with the Market link and QR code, lies after the break...

Cotton fabric cleans itself when exposed to ordinary sunlight

Cotton fabric cleans itself when exposed to ordinary sunlight [ Back to EurekAlert! ] Public release date: 14-Dec-2011

Imagine jeans, sweats or socks that clean and de-odorize themselves when hung on a clothesline in the sun or draped on a balcony railing. Scientists are reporting development of a new cotton fabric that does clean itself of stains and bacteria when exposed to ordinary sunlight. Their report appears in ACS Applied Materials & Interfaces.

Mingce Long and Deyong Wu say their fabric uses a coating made from a compound of titanium dioxide, the white material used in everything from white paint to foods to sunscreen lotions. Titanium dioxide breaks down dirt and kills microbes when exposed to some types of light. It already has found uses in self-cleaning windows, kitchen and bathroom tiles, odor-free socks and other products. Self-cleaning cotton fabrics have been made in the past, the authors note, but they self-clean thoroughly only when exposed to ultraviolet rays. So they set out to develop a new cotton fabric that cleans itself when exposed to ordinary sunlight.

Their report describes cotton fabric coated with nanoparticles made from a compound of titanium dioxide and nitrogen. They show that fabric coated with the material removes an orange dye stain when exposed to sunlight. Further dispersing nanoparticles composed of silver and iodine accelerates the discoloration process. The coating remains intact after washing and drying.

Pear and blue cheese bacon pizza

December is National Pear Month. Celebrate with a savory pear pizza as your main course.

December seems an odd month to honor any produce that isn?t a root vegetable. At least that?s what I thought until we recently attended a pear-focused luncheon at Chicago?s Blackbird. The event was hosted by Pear Bureau Northwest as part of an eight-city tour aimed primarily at helping people understand how to tell when pears are ripe and ready to eat. More about that later.

Skip to next paragraph Terry Boyd

Terry Boyd is the author of Blue Kitchen, a Chicago-based food blog for home cooks. His simple, eclectic cooking focuses on fresh ingredients, big flavors and a cheerful willingness to borrow ideas and techniques from all over the world. A frequent contributor to the Chicago Sun-Times, he writes weekly food pieces for cable station USA Network's Character Approved Blog. His recipes have also appeared on the Bon App?tit and Saveur websites.

Recent posts

We were treated to a four-course meal by Chef de Cuisine David Posey that showcased pears? versatility, from pear and butternut squash soup with blis char roe enrobed in stout foam to leg of lamb with roasted pears, maitake mushrooms and hearts of palm and, for dessert, warm beignets with butterscotch, spiced brittle, pears and maple ice cream. We were also treated to lively conversation between delicious bites, much of it about food, but only a little of it about pears. Still, we came away knowing a great deal about this popular fruit.?

First, as we all try to eat more seasonally, the pears you see in the store now ? or in January or well into the spring, for that matter ? haven?t been grown in Chile or some other far-flung spot. They?re part of this fall?s US harvest. Pears ripen best off the tree, so they?re picked when mature, but not ripe, and kept in cold storage. While in cold storage, they don?t ripen, but do continue to convert starches to sugar, improving their flavor as they essentially hibernate. Once they show up on your supermarket?s non-refrigerated shelves, they begin to ripen.

So how do you know when they?re ready to eat? Skin color isn?t a reliable indicator. While Bartletts change from green to yellow as they ripen, most others show little change in color. The best way is to ?check the neck,? an idea so helpful that Pear Bureau Northwest has actually trademarked it. Pears ripen from the inside out, and the neck is the narrowest part. Using your thumb, apply gentle pressure to the neck or stem end. If it yields slightly, the pear is ripe.

If the pears at the store aren?t ripe yet, that?s okay. They?ll actually transport more easily ? a ripe pear?s skin is fragile ? and will ripen at room temperature in your kitchen. And if they?re ripening faster than you can use them all up, pop them in the fridge to slow the process.

We?re no strangers to cooking with pears here at Blue Kitchen. Sure, we?ve made desserts with them ? Baked Pears with Currants and Walnuts and Frangipane Pear and Cherry Cake were both big hits. We?ve also served them for breakfast as Ricotta Pancakes with Saut?ed Pears, for lunch in Grilled Cheese Sandwiches with Pear Jalape?o Chutney and for dinner as Pork Tenderloin with Roasted Pears and Onions. We?ve even saut?ed them for a Valentine?s Day dinner of Duck Breasts with Pears and Shallots.

So the question wasn?t how to cook with pears, but rather what else to do with them. I had started down the pear cheese tart or galette path when Marion said, ?What about pizza?? After we both shuddered over college memories of pineapple on pizza, we agreed she was on to something.
